Perfect for Sunday dinner or a weeknight meal, it’s hearty enough to stand alone but also shines when served with rice, mashed potatoes, or crusty bread to soak up every drop of that savory broth.
Ingredients
-
8 chicken drumsticks
-
4 tablespoons olive oil
-
1 tablespoon Salt & Char
-
1 tablespoon Harvest Blend
-
1 teaspoon Pepper & Co.
-
1 green bell pepper, sliced
-
1 yellow bell pepper, sliced
-
1 red bell pepper, sliced
-
1 orange bell pepper, sliced
-
3 cloves garlic, smashed
-
1 medium yellow onion, sliced
-
¼ cup green olives
-
3 cups chicken broth
-
Fresh parsley, for garnish
Instructions
1. Season the Chicken
Pat chicken drumsticks dry. Rub with 2 tablespoons of olive oil, Salt & Char, Harvest Blend, and Pepper & Co. until evenly coated.
2. Brown the Chicken
Heat the remaining olive oil in a Dutch oven over medium-high heat. Sear drumsticks until golden brown on all sides, about 6–8 minutes. Remove and set aside.
3. Sauté the Aromatics
Add onion, garlic, and sliced bell peppers to the same pot. Cook for about 5 minutes, stirring occasionally, until softened and fragrant.
4. Build the Stew
Stir in green olives, then return the chicken to the pot. Pour in chicken broth, making sure drumsticks are mostly submerged. Bring to a gentle simmer.
5. Simmer Until Tender
Cover and cook on low heat for 35–40 minutes, stirring occasionally, until chicken is tender and fully cooked.
6. Finish & Serve
Taste and adjust seasonings if needed. Garnish with fresh parsley. Serve warm over rice, mashed potatoes, or with crusty bread.
