Slow Cooked Green Beans and Potato Gravy

This slow-cooked green bean recipe is all of that in one pot: simple, wholesome ingredients coming together the way good food always has — slowly, with care.

Fresh green beans, tender potatoes, onion, and garlic cook down in a smoky, buttery broth until everything melts together into something rich, savory, and deeply satisfying. It’s humble food, made with love — the kind that reminds you of slow afternoons, family kitchens, and second helpings.

Ingredients

  • 1 lb fresh green beans, trimmed

  • 1 ½ lb bone-in smoked pork or smoked turkey (optional, but adds rich flavor)

  • 1 medium onion, diced

  • 3–4 cloves garlic, minced

  • 4–5 medium potatoes, peeled and cubed

  • 4 cups vegetable broth (or chicken broth if preferred)

  • 2–3 Tbsp butter, divided

  • 1–2 Tbsp oil

  • 1–2 Tbsp Made by Madi Pepper & Co seasoning (adjust to taste)

  • Salt, to taste

Instructions

  1. Brown the pork and aromatics
    Heat oil in a large pot or Dutch oven over medium heat. Add the smoked pork and brown it on all sides to release flavor. Add the onion and garlic and cook for 3–4 minutes, until softened and fragrant.

  2. Add the broth
    Pour in the vegetable broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer, then cover and cook for about 45 minutes to let the flavors develop and the pork start to tenderize.

  3. Add potatoes
    Stir in the potatoes and season with Made by Madi Pepper & Co. Cover and simmer for about 20 minutes, until the potatoes start to soften.

  4. Add green beans
    Add the green beans and stir to combine. Reduce the heat to low, cover, and let everything cook slowly for 1½ to 2 hours, stirring occasionally. The potatoes will thicken the broth into a rich, gravy-like sauce.

  5. Finish and adjust seasoning
    Stir in the remaining butter and taste for seasoning. Add more Made by Madi Pepper & Co or a little salt if needed. Remove the bones and shred any meat before serving.

Serve warm with cornbread or a crusty piece of bread to soak up the buttery sauce.
