Roasted Root Veggie Medley

with Made by Madi’s Caramelized Onion Blend
Sweet, savory, no-fuss roasted perfection.

This cozy roasted veggie mix delivers rich flavor with minimal cleanup. Tossed directly on the pan with Made by Madi’s Caramelized Onion Blend and a drizzle of olive oil, then roasted until golden and finished with warm honey, this recipe is a go-to for simple comfort.


Ingredients:

  • 1 large sweet potato, peeled and cubed

  • 1 golden potato, cubed

  • 1 carrot, peeled and chopped

  • ½ purple carrot or beet, diced (optional)

  • 1 tbsp olive oil

  • 1 tbsp Made by Madi Caramelized Onion Blend

  • ½ tsp sea salt (optional)

  • Zest of ½ lemon

  • 1–2 tsp honey, for drizzling

  • Chopped green onion (optional garnish)


Instructions:

  1. Preheat oven to 425°F (220°C).

  2. Line a baking sheet with parchment paper.

  3. Spread the chopped veggies directly on the pan.

  4. Drizzle with olive oil and sprinkle with Caramelized Onion Blend and salt. Toss gently with your hands or a spatula to coat.

  5. Roast for 25–30 minutes — no need to flip.

  6. Remove from the oven and immediately drizzle with honey so it melts over the veggies.

  7. Add lemon zest and green onion before serving.

Tip:

Skip the mixing bowl — toss it all right on the pan and let the oven do the work. The edges crisp up beautifully while the centers stay soft and sweet.
