Ground chicken is seasoned with Island Gold, smashed onto tortillas, grilled until crispy, and topped with a fresh mango salsa and crunchy cabbage. The sweet mango pairs perfectly with the warm spices and subtle heat in Island Gold for a flavor combination that’s fresh, vibrant, and perfect for summer.

Ingredients
For the Chicken
- 1 lb ground chicken breast
- Island Gold seasoning, to taste (add more if you like extra spice)
For the Mango Salsa
- 1 ripe mango, diced
- ½ red onion, finely diced
- Juice from ½ lime
- 2 tablespoons fresh cilantro, chopped
- Salt, to taste
For Serving
- 8–10 small tortillas
- Shredded green cabbage
- Lime wedges (optional)
Instructions
1. Make the Mango Salsa
In a bowl, combine the diced mango, red onion, lime juice, cilantro, and a pinch of salt. Stir well and set aside while you prepare the tacos.
2. Season the Chicken
Add the ground chicken to a bowl and season generously with Island Gold. Mix until the seasoning is evenly distributed throughout the meat.
3. Build the Smash Tacos
Divide the chicken mixture among the tortillas. Spread a thin layer of chicken over each tortilla, pressing it evenly to the edges.
4. Grill
Place the tortillas chicken-side down on a hot grill. Cook until the chicken is fully cooked and lightly browned. Flip and cook the tortilla side until golden and crisp.
5. Assemble
Top each taco with shredded cabbage and a generous spoonful of mango salsa.
6. Serve
