These Hidden Veggie Chicken Nuggets are one of my favorite meal prep recipes because they’re simple, packed with protein, and have a serving of vegetables mixed right in. They’re crispy on the outside, juicy on the inside, and perfect for toddlers, busy families, or anyone looking for a healthier homemade nugget.
The best part? You only need a handful of ingredients, and my Harvest Blend and Salt & Co. seasonings do all the heavy lifting when it comes to flavor.

Ingredients
- 2 boneless, skinless chicken breasts
- ½ cup carrot purée
- 1 large egg
- ½–¾ cup panko breadcrumbs, plus more for coating
- 1 tablespoon Made by Madi Harvest Blend
- 1 teaspoon Made by Madi Salt & Co.
- Avocado oil or olive oil spray
Instructions
- Cut the chicken breasts into chunks and add them to a food processor.
- Add the carrot purée, egg, Harvest Blend, Salt & Co., and panko breadcrumbs.
- Pulse until the mixture is combined but still has a little texture. If it feels too wet, add a little more panko until it’s easy to scoop.
- Scoop about 2 tablespoons of the mixture and shape into nugget-sized pieces.
- Coat each nugget in additional panko breadcrumbs, pressing gently so the coating sticks.
- Arrange the nuggets in a single layer in your air fryer basket and lightly spray with avocado or olive oil.
Air Fryer Instructions
Air fry at 400°F for 10–12 minutes, flipping halfway through, until the nuggets are golden brown and the internal temperature reaches 165°F.
Serving Suggestions
Serve with fresh fruit, roasted vegetables, sweet potato fries, or your favorite dipping sauce like honey mustard, ketchup, or ranch.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer for a few minutes to bring back the crispy coating. These also freeze well for quick lunches or easy weeknight dinners.
