As a mom, I’m always looking for ways to make breakfast a little healthier without making it feel like “healthy food.” These Apple Cinnamon Waffles are naturally sweetened with applesauce, packed with warm cinnamon, and have a hidden serving of carrot purée for an extra boost of nutrition. The best part? They still taste like a cozy apple cinnamon waffle.

Ingredients

  • 1¼ cups milk
  • ⅓ cup unsweetened applesauce
  • ⅓ cup carrot purée
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 4 teaspoons sugar or honey (exclude if using sweetened applesauce)
  • 2 teaspoons Made by Madi Pumpkin Path (or cinnamon)
  • 1 teaspoon chia seeds

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, flaxseed, sugar, and nutmeg if using.
  3. In a separate bowl, whisk together the milk, applesauce, carrot purée, eggs, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Don’t over-mix—a few small lumps are perfectly fine.
  5. Let the batter rest for 5–10 minutes. This gives the chia seeds time to absorb some of the moisture and helps create fluffier waffles.
  6. Lightly grease your waffle iron if needed and cook according to your waffle maker’s directions, about 3–5 minutes, until golden brown.
  7. Serve warm with butter, maple syrup, fresh fruit, or Greek yogurt. Makes 8-10 waffles depending on waffle maker.
